Do you guys feel uninspired in the mornings? I am the world's worst breakfast maker. My Dad on the other hand whips up Belgian waffles, scrambled eggs with mushrooms and goat cheese, and a plethora of other dishes that I sadly dream about over a bowl of stale Cheerios. Anyway, the other morning I was daydreaming about a bowl of oatmeal that Nikki and I shared while at Urth Cafe in West Hollywood. Never been there? Go. Go now. It describes itself as Banana Nut Oatmeal with Caramel Sauce. Light bulb. I can sort of do this.

Oatmeal with Caramelized Bananas
1 Cup Oatmeal (cooked according to directions. I totally cheated here and bought Trader Joe's Instant Oatmeal, but it worked for a weekday breakfast. On the weekends I might make it the old fashioned way).
1 Banana, sliced
1 teaspoon coconut (or butter)
1 tablespoon honey
1 tablespoon hot water
1/2 cup granola (I used maple pecan granola, so good)
Milk for stirring in
Cook your oatmeal. While it's cooking, melt coconut oil over a skillet. Once skillet is hot add banana slices. Cook one to two minutes on each side (flip when they start browning). Remove the banana from the skillet to a plate and pour a mixture of the hot water and honey over the bananas, then sprinkle with cinnamon. Put your oatmeal in a bowl, top with the banana mixture and granola. And you're done. It's seriously such a treat! ;)
