Sweet indeed. I leave you with an easy chocolate and strawberry cupcake recipe. Trust me, it's good (and easy).
What you'll need:
For the Cake:
1 box of chocolate cake mix. I used Betty Crocker, but any will do.
1/3 cup vegetable oil
1 cup Water
For the Frosting:
1/2 cup strawberries, blended. This is about 5 large strawberries
1 cup of butter, softened
3 cups of confectioners sugar
1/2 teaspoon vanilla extract
24 cupcake cups
Mix together ingredients for the cake as directed and spoon into cupcake tins (not quite half full). Bake at 375 for 15 minutes, or until a toothpick comes out clean.
Place your strawberries into a blender and blend until they are pureed. In a small bowl mix together the butter, sugar and vanilla until they are well mixed, slowly add in about three tablespoons of the strawberry puree. You can add more to suit your needs, but keep in mind the frosting will get watery the more you add.
Frost your cupcakes once they have cooled a bit and add some chopped strawberries or sprinkles or whatever bling you like for a little garnish.
