Matt and I are really into easy, light meals lately. The kind of meal that takes little to no brain power or energy to make, because let's face it, I'm droopy at the end of the day. Sometimes I just want to say: "Forget it all!" and grab a bowl of cheerios. But no, friends, no. That is not the Italian way. Besides it's summer and everything is fresh and crisp and peaches are in season (which means you can make a goat cheese and peach* pizza)!
2 ripe peaches or nectarines. I love the white ones.
1 small onion, chopped
5 tablespoons of goat cheese (If you can, get the honey flavored. Thank me later).
1 tablespoon of olive oil
Pizza dough (I get mine from Trader Joe's)
Salt + Pepper to taste
Flour your countertop and stretch out your pizza dough.
In a pan, add the olive oil and saute the onions until translucent and slightly golden (about seven minutes)
Sprinkle them across the pizza dough when down and add dollops of the goat cheese.
Top off with the sliced peaches.
Bake in the oven for about 10-12 minutes, according to the directions on your pizza dough.
Take out and serve with a glass of crisp Pinot Grigio!
*This pizza was actually made with nectarines (also tasty and no fuzzy skins). But Peachy Pizza sounded better than Nectarine-y Pizza. ;)
