I'm not sure if I've actually confessed my love affair with avocados here on the blog. I guess every Californian has a certain affinity toward avocados. If you don't, are you really from California? :) In any regard one of my favorite quinoa concoctions includes grilled chicken, onions, mango, bell pepper, avocado and lemon (or lime) + salt and pepper. A bowl of it for lunch is just about perfect, trust me. Anyway, the other night I had this brainstorm. What if I stuffed it IN the avocado for a light dinner. Cute, right? Yes. And delicious.
So I encourage you to give it a try. And eat it with a glass of white wine at your side. Fetzer Gewurztraminer is one of my favorites.
