A Delicious Summer Salad


I'm always scouting for easy recipes. Having kids limits your time in the kitchen, which actually makes me sad, because one of my favorite activities is cooking with a glass of wine in hand while watching/listening to Anderson Cooper 360. This has not happened in a long while, friends. These days bath times, toddler dinners, tantrums, newborn screaming, rocking and nursing seems to be taking up the bulk of my time. (By bulk, I mean all of it). But, and I know you'll be impressed, the other night I whipped up this awesome salad. It took 20 minutes (maybe 30, since 10 of those minutes were interrupted by our latest addition, who was grunting and bemoaning about not being held). I can't take the credit for the recipe, I'll leave that to Real Simple, but I've included the instructions below (with my own adaptions).

Chicken and Olive Bread Panzanella

What you'll need:
8 oz cubed olive bread
Olive Oil
Apple Cider Vinegar
Rotisserie Chicken
Fresh Mozzarella (or goat cheese)
Roasted Red Peppers (I used marinated artichokes)

Toss the cubed olive bread with 2 Tbsp of olive oil on a baking sheet and toast at 360 for 15 minutes. Whisk together 1/3 cup of olive oil and 2 Tbsp of apple cider vinegar. Toss with the bread, 4 cups of baby arugula, 2 cups sliced rotisserie chicken, 8 oz fresh mozzarella* and 1 cup sliced roasted red peppers.*

*I didn't have fresh mozzarella or roasted red peppers, so I improvised with plain crumbled goat cheese and marinated artichokes...turned out fantastic!

I just *bought* some grilled chicken because while yes, the intention of grilling chicken myself and saving it for things like this is there, but it never actually happens. i bought because I have been craving a salad just like this. But I didn't have a recipe, now I do. awesome, thanks!
