Pistachio Thumbprint Cookies

I have been wanting to make these pistachio thumbprint cookies ever since I spotted them on one of my daily reads: A PIECE of TOAST. I finally got hold of a mixer (thanks Alexa!) and made them for my boss's birthday. Guessing by the number of people who found time to swing by the marketing department for a taste, they were a hit. Here's the recipe:
 
Ingredients:
1/3 cup Powdered Sugar
1 cup Butter, softened
1 tsp Vanilla
¼ tsp Almond Extract
3 ½ oz. package Instant Pistachio Pudding Mix (by the jell-o)
1 Egg
2 cups Flour
½ cup Semi-sweet Mini Chocolate Chips
Pre-heat oven to 350 degrees.  Cream powdered sugar, butter, vanilla, almond extract, pudding mix, and egg.  Stir in flour and chocolate chips until well blended.  Shape into 1” balls and place on cookie sheets lined with parchment paper.  Make thumb imprint in center of each cookie (make sure not to press all the way through the dough!).  Bake for 10-12 minutes (we only baked ours for 10 minutes and they were perfect… you don’t want the edges to brown).

Frosting Ingredients:
1 ½ cups Powdered Sugar
2 Tbl Butter, softened
1 tsp Vanilla
½ tsp Almond Extract
1-3 tsp Milk
1-3 drops Green Food Coloring
Combine all ingredients together (we use a mixer with the whisk attachment).  Add more milk in small increments if frosting seems too thick.  Add more drops of food coloring for desired green tint – we like to keep ours on the light side.  Wait for cookies to cool COMPLETELY.  If you don’t the frosting will run off the cookies and make a delicious mess.  Once cookies have cooled, spoon small amounts of icing onto each cookie, filling the “dent” made by your thumb. 

*Disclaimer: My cookies didn't turn out nearly as pretty as the girls from A PIECE of TOAST, but dropping them into a few mason jars made all the difference!
