Chocolate Gooey Butter Cookies

2/07/2012

A few girls at work are amazing bakers, which I admire since sometimes my recipes fall flat (I have tried to make Ian's favorite dessert, key lime pie, three times without success!). When I needed an easy cookie recipe for a friend's birthday, they gave me this recipe for Chocolate Gooey Butter Cookies. Simple ingredients, simple steps (although I do need to pick up an electric mixer stat) and they were delicious.

Ingredients

1 (8 oz.) brick of cream cheese, room temperature
1 stick butter (this is a Paula Deen recipe y'all), room temperature
1 egg
1 teaspoon vanilla extract
1 box moist chocolate cake mix
Confectioner's sugar (for dusting)

Directions

Preheat the oven to 350. Using an electric mixer, cream the butter and cream cheese together until smooth. Beat in the egg. Beat in the vanilla. Beat in the cake mix. Cover and refrigerate for two hours (I left mine overnight). Roll into tablespoon sized balls and roll into sugar. Bake for 12 minutes so they are still gooey in the center. Try not to eat them all!

These sound amazing! And I love that there are only a handful of ingredients (all of which I have at home).
