Why Hello There Cupcake

The other day I made cupcakes for a gathering with old friends. Of course it was rushed and last minute and I made a mess, but I swear it was a super simple recipe (key when you are trying to make fancy cupcakes during naptime)! I've shared the recipe below. Happy baking lovelies!

Boxed cake mix (any flavor you want, I used Vanilla).
1/3 Cup of water

2 eggs
8oz Cool Whip
Small Box Instant Pudding Mix - I used Vanilla
1 cup Milk
Jam - I used Blueberry
Blueberries
Cherries
Cupcake tins

Pre-heat oven to 350 degrees. Make the cakemix according to the directions on the box - beat with mixer. Place cupcake tins in pan and spoon a tablespoon of batter into each tin. Use one teaspoon of jam, then add another tablespoon of batter.

Place cupcakes in the oven to back. My regular-sized ones took 20 minutes, the small ones took 12 minutes. While they are cooking, make the frosting, combine the milk and pudding mix with a whisk, then fold in the cool whip.

Once the cupcakes have cooled a little, add the frosting and top with the blueberries and cherries. You can use any fruit that you want and jam. Those are just what I had on hand.
