Summer Dinners

{My favorite recipe we have made all summer: grilled pork and peaches (with leftover chili rice casserole from our 4th of July bbq). Looks and tastes gourmet but is super easy}

{When I eat alone, it's usually something pretty simple. Ian worked late one night recently and I was still full from a massive salad at lunch so I made a simple pizza from Trader Joe's}


{Grilled chicken burgers, salad and sweet potato fries. Ah, summertime!}


{We used up the rest of our sweet potato fries a few nights later, pairing them with tri tip and a grilled asparagus, mushrooms and onions}

{Broccoli and orange chicken with basmati rice. Everything in this dish is frozen - we keep things like this on hand for when we need something quick}

Here's a taste (pun intended) of what Ian and I have been cooking this summer. As you can see, we do a lot of grilling and Ian loves potatoes! I tend to eat pretty clean during the day - fruits, veggies and whole grains - so I don't feel guilty about having sweet potato fries twice in one week! We try not to waste food so sometimes we end up repeating meals during the week, as you've probably noticed, with seasoning and sides mixed up.

Pork and peaches? Not something I would have EVER thought of but I am so tempted to try it! :)

Mmm looks delicious! I know what you mean about that frozen orange chicken, we just made some of it the other night. So good when you need something quick.
