Ricotta.

Being half Italian my diet routinely consists of pasta dishes and red wine. Another thing that pops up frequently is ricotta cheese. I love it's richness and texture (it's great for stuffed shells). I was elated to find this recipe for rich homemade ricotta on Smitten Kitchen. Homemade ricotta spread on toasted crostini topped with sea salt and honey? Buon Appetito! Of course not that I have the time or energy to make this...on second thought, my Italian father will be in town next week! (Hint hint).

Mmm! I never thought of eating it that way. I was making stuffed shells the other day and got some ricotta on my hand. When I licked it off it was delectable just on its own!
