Breakfast Polenta

I normally stick to oatmeal unless Ian's cooking, but on Saturday he was out the door at 4am (!) taking water samples for work (his company does water and environmental consulting). I couldn't go back to sleep after he left and needed a greasy breakfast after one too many margaritas the night before. It was pouring out so I wanted to make something with ingredients we had on hand, and wound by making my own version of this savory breakfast polenta I found on Joy the Baker. It was so easy that I made it for Ian when he got home from work later that morning.
