Lemon Ricotta Pancakes

During the weekdays, I wait until I am sitting at my desk, coffee in hand, to eat my breakfast. I usually go for oatmeal topped with fruit or with a spoonful of peanut butter stirred in (the best addition to oatmeal. Seriously, try it). But these lemon ricotta pancakes are making me wish I didn't press snooze that second--okay maybe third--time this morning. If I had been up earlier I might have been able to whip up a batch of these lighter-than-air lemony confections. Topped with fresh-cut strawberries and a drizzle of syrup, I can't think of a more perfect breakfast.
